4 ounces semi sweet chocolate chips
3 tablespoons heavy cream
1&1/2 tablespoons flavoring (almond, fruit etc.)
1/2 ounce almond bark or paraffin chocolate, or candy coating/ or instead cocoa
2 tablespoons butter
optional dried fruit to roll into the middle of truffle (like raspberry, cheery, or strawberry etc.)
Double broil (large pan with and inch or 2 of water on med low with smaller pan or glass bowl of ingredients inside larger pan, water should not be touching bottom of smaller pan or bowl)
So double broil the cream, chocolate chips and butter constantly stirring until velvety smooth. Remove from heat add flavorings. freeze 1/2 hour. Roll into balls adding fruit at this time if you choose
***and roll immediately into cocoa then refreeze***
****or if not using cocoa method which i prefer not cocoa re freeze 1/2 hour pull out and dip into nuked paraffin chocolate, or almond bark or candy coating***
set on wax paper to dry.
