Baked Oatmeal

Baked Oatmeal is an almost oatmeal bar. We make it whenever company is coming so they have a quick meal they can heat up and not wait for me to get up with baby. This recipe is made with milk and eggs and most oatmeal contains gluten.  I mention this for allergies, as well as to explain it has good protein for breakfast. This is great by itself or with whipped cream (my daughter eats this way), with milk (my husband) or with a little butter and brown sugar (guilty as charged). I can last for a good week in the fridge, great cold or just nuke it and its ready to go.


6 cups baked oatmeal
2 teaspoons salt
1 teaspoon cinnamon
2 cups milk
4 teaspoons baking powder
1 & ½ cups sugar
1 cup oil (your choice, canola’s better for you then veggie)
4 eggs
Optional to taste 4 tablespoons: raisins, banana, apples or even coconut
Grease 9x13 pan preheat oven to 350 separately mix dry and wet then mix together lightly brush top with melted butter and sparingly add cinnamon sugar mix over top to form a crust bake 30-40 mins till middle is set.
